Southern Faux- Fried Okra

One of my favorite vegetables to grow is okra.  When I see those beautiful pods I get the old southern hankering for some fried okra like my grandmother used to make in her iron skillet.   And then I think about the fat, the mess, the greasy, lingering smell…and think not.  Here’s a solution that makes me and my taste buds happy and hopefully it will make you happy too.

Southern Faux-Fried Okra

2 T flaxseed meal
3/4 C + 4 T non-dairy milk
1 lb okra, cut into ½” pieces
1 C bread crumbs
1-2 t salt
1 T dried herbs (basil, oregano, or parsley)

Combine the flaxseed and 4 T non-dairy milk.  Mix together and set aside for about 10 minutes for flaxseed to “gel” with milk.

On a plate or shallow dish, combine bread crumbs and spices, mixing well.

Pour flaxseed mixture and remaining milk into bowl large enough to hold milk & okra.

Stir the flaxseed and milk until incorporated.

Fold in the okra and stir until well coated.

Place pieces of the okra on the plate of breadcrumbs, being careful not to lump them together.  Coat them well and place onto shallow non-stick pan or griddle on medium low heat, cooking in small batches.

If desired, spray pan with a tiny bit of cooking spray.

Watch carefully, cooking time is a couple of minutes per side.  Bread crumbs burn easily.
