Mediterranean Flatbread Pizza

I’m loving this self-induced Pizza Fest.  Not only do I get to experiment and make some delicious pizzas, I get to eat them!

Fortunately, you can make a delicious, healthy plant-based pizza that is every bit as good as any pizza around.

This Mediterranean Pizza is nutritionally low calorie, low fat and salt, providing protein, iron, calcium, fiber and vitamins A, E and C.

½ C Pizza Sauce recipe
1 C broccoli florets, sliced to lie flat
1 can quartered plain artichokes, drained and cut in half
1 C Baby Bella mushrooms, sliced
½ C fresh asparagus tips and stems
1 T dill
1 t salt
½ t garlic powder
½ C Go Veggie mozzarella shreds
¼ C water
1 Mama Mary’s Whole Wheat Flatbread or Pizza crust

Preparation:

Saute mushrooms in water, sprinkle with garlic powder and 1/4 t salt.

Cut artichokes and lay on paper towels to absorb water

Steam broccoli and asparagus separately just a few minutes until bright green, remove quickly from steam to prevent overcooking.

Assembly:

Spread pizza sauce on flatbread

Layer mushrooms, broccoli, artichokes, asparagus then cheese.

Bake according to crust package directions.

Makes about 8 slices.
