One thing I initially missed when changing to the Plant Based way of eating was pizza. But I have found the right ingredients can make a plant based pizza just as delicious and as satisfying as any I used to enjoy.
For the next few days it’s Pizza Fest and I’m going be posting different pizza recipes with combinations of veggies that compliment each other. The first is Spinach & Tomato with Basil.
½ C Thick & Rich Pizza Sauce
3 Roma Tomatoes, sliced thin
1 C packed fresh spinach, steamed lightly
½ C Go Veggie Mozzarella
1 T dried Basil
1 Whole wheat Mamma Mary’s flatbread or pizza crust
Steam spinach a few minutes until bright green to retain some moisture.
Spread sauce on flatbread.
Layer spinach, then tomatoes.
Sprinkle with basil.
Top with veggie mozzarella.
Bake according to crust directions. Best served hot. Makes 8 slices.
