Spinach Roll-Ups

Nutritious, flavorful and easy to make, these roll-ups will be a hit for lunch or dinner.  If you prefer, frozen spinach can be used as well to save time.  Serve with a side of rice and salad.

Some of the nutritious benefits of these roll-ups are Vitamins C and A, calcium, iron and a little protein and whole grains.

5 C packed fresh spinach
1 clove garlic, minced
¼ C onion, chopped
1 roma tomato diced,
1 C Baby Bella mushrooms, sliced
1 t salt
4 T vegan mozzarella cheese (ex. Go Veggie)
4 T Hummus
Low carb whole wheat tortillas
1/2 C water

Saute onions, garlic and mushrooms in a little water, adding ½ t salt.  Cook about 10 minutes until soft put in a bowl, draining liquid back into pan, and set mushrooms aside.

Saute spinach in juice and about ½ c water, cook down and with spatula, squeeze and discard liquid.

Add tomato and cook a few minutes longer.

Heat pan or Panini grill.  Spread 1 T Hummus in middle of each tortilla.  Layer desired amount of spinach and mushroom mixture in tortillas, top with a 1 T of cheese, roll up and place on grill, heating until brown.

Note:  5 C packed spinach equals about 1-1/2 Cups cooked.  I have found low carb tortillas more pliable and easy to wrap or roll.

 Makes 4 rolls.
