My Plant-Based lifestyle began about 2 years ago.  During the transition, I occasionally wanted meat.  Although I was never a big red meat eater, this is usually what I craved.  Enter “the other red meat”.  Processed soy crumbles.  I don’t recommend eating this on a regular basis, because it is a highly processed food.  But it was a soft landing if I was going to fall off the wagon and head toward real red meat.

Taco Filling

Taco Filling

 ¼ C onion, minced
1 lg clove garlic, minced
½ t salt
1 T chili powder
½ t cumin
1 T tomato paste
1 t apple cider vinegar (optional)
1 pkg. Boca Crumbles or similar
1 1/2  C water

Saute onions and garlic in a little water until tender.
Add spices, water, vinegar and tomato paste, stirring well until paste is incorporated.
Add crumbles.  If frozen, break up and allow to cook in liquid.
Bring to a boil then reduce heat and cook until liquid is absorbed, about 20 minutes.

Use in any dish that requires a Mex type filling.
